I agree that modern oils (especially the synthetics) are pretty much immune to coking, but deleting the oil cooling in favor of more water cooling does not seem sensible. Both systems serve well to control engine operating temperature. A better solution would be to have a radiator custom made with a denser (more water lines and fins) core but dimensionally equal to the existing core.
