190e 2.3 TPS Resistance
Is there a way to check the resistance of the throttle position sensor to see if it is bad? And if so, what should I read on my ohm meter. I checked my TPS and the resistance climbed as the throttle was opened and then jumped around and decreased at almost full open throttle.

The throttle switch is an open close switch One portion works at idle and another at close to full throttle.
If you are talking about the airflow potentiometer then the best way to test is for voltage at the signal lead. The other two wires going to it are ground and the 5v signal wire. Idle should be around .8-1.0v going to 3+v at full range (check with engine at idle or with key on engine off with the sensor plate pushed all the way down.

The sensor that I'm talking about is the one thta is on the side of the throttle body below the air flow meter. It has three wires connected to it.

Sounds like the throttle switch to me. It is not a potentiometer. It is a straight on off switch. One for idle and one for full throttle.
