What's Under Your Grill?

Although it has an automotive connection . . . no sofa pillow shaped briquets for me, thank you. No self lighting or fuel soaked pucks . . .

It either looks like was once attached to a tree, or it's not under the grill!

Yes, gas grills are convenient, but that's about it.

No, seriously I use charcoal with mesquite wood chips. But not this weekend. We are in a severe drought so no one can burn anything outside right now.

I use oak and only oak. I can't stand the taste of propane grilled meat- it's just not right. Same with charcoal. For the best flavor get a nice bed of oak coals going, then put some white oak bark on top and indirect cook the meat- yummmmm!

Natural mesquite charcoal, no briquettes. I use dried mesquite beans soaked in water for smoking.
I have gas too, and will use it when I don't want to wait for a good fire.

There is one useful purpose for briquettes. Dutch oven cooking. Especially when baking, it's much easier to control heat with briquettes and they aren't imparting any flavor to the food anyhow with a closed dutch.
