my 1992 500e got the EOM full sound system but last owner change the radio to a pioneer & he has connected the speakers without the amps. Is there a solution to reconnect a non EOM radio to this system ?

If wired up properly the system should sound as good if not better with the aftermarket radio's amp powering the speakers. The next step would be to add an amp to run the door woofers and replace the dash speakers.

You recommend to change the dash speakers. Do you think they deliver a poor sound quality by comparison with pionneer, alpine... stuff ?

If they are still original they are only a dual cone speakerin the front of the car yet in the rear there are two tweeters on each side. They lack high freq response and anything would be better. I sell a speaker made for the 124 cars that is the exact size for the dash opening as it is larger than 4 in and smaller than 5.25. Let me know if you are interested.
