I beleive grits are dried, ground hominy. I'll ask a southern boy (in his 70's) I know who is a folklorist. I'm willing to bet that grits change moving from one southern state to another.

Hey Antony, don't be ashamed of that yankee-gene expressing itself. The grits gene is a blessing of the southern genome of which no everybody is blessed.

Talking That is OK

In Virginia we don't care much for Cod .
You have my Cod and I will enjoy your Grits.

If I don't hate grits, does that mean I have some southern gene in me?
How would I have gotten a southern gene, I'm all northern?
We grow alot of corn around here, maybe that has something to do with it.
Of course, maybe having southern genes means you CRAVE grits, which as I said before isn't really true. If I'm down south I have some grits.

That's the way I like mine too. I'll eat them plain, either way is good. Being born in the South, how can I not like grits? I don't care to much for "loading" them up though. It may add taste, but it also adds fat and calories.

How many of ya'll like beefhash? I've never had it before, but my grandfather (who's 83 this year) alway made it for my older brothers when he used to be nice. This cuisine, has also been combined as beefhash and grits.

I like Huevos rancheros but instead of chorizos I like hog's head cheese. No grits with this one, thankyou, beans give me all the carbs I need. Between Scott and Cankton is a store named, "Best Stop" which has the world's best andouille sausage and the worlds best head cheese. Their boudin is very good too, but I like more onion, less hog grease. The best boudin is from Charlie G's in Breaux Bridge. Boudin, the breakfast of short-lived champions: "It's better to burn-out than fade away."

Hey Narwhal, think we should sue hog's head cheese folks? You know, mad-sow disease....

Charlie G's? I thought that was a chain restaraunt in Lafayette? Marceaux's in Gueydan has fresh boudin, and of course, everyone around there makes their own too. I love it. Not real big on hog's head cheese--I'll stick to the super-expensive Chorizo.
Excellent point. I don't know who' zooming whom, but the Charlie G's in Lafayette is a fancy restaurant....good food, too. But Charlie G's in Breaux Bridge is def a cajun/creole condiment shop. The ambience is uh, ... less formal than the Laf place. I wonder if one is the flip-side of the other. Hey, do you youngsters understand teh term, "flip side?"

I've only been to Charley G's once, a couple years ago, and it was pretty good. Sort of a "Copeland's" knock-off.

So, where's the best catfish restaurant in MS? If there is one otehr person on the forum from Mississippi, this should start an argument. But then, you're a lawyer, you probably have two reasonable yet conflicting opinions on your own.

The best catfish house in MS is Jerry's on Hwy. 49 South about 20 miles south of Jackson in Richland. the place looks like a spaceship, and is literally dome-shaped, with the two floors running around the inside of the dome and an atrium in the middle. All you can eat, and the catfish come from Belzoni, where they are supposed to.

The best in LA is probably Middendorf's in Manchac on beautiful Lake Mauripas. Agreed?
I've eaten at Middendorf's since my first visit in the early 1970's. The catfish is excellent. Their seafood platter is a killer. First-timers should bring a designated driver.

One of my favorites, but I haven't been to since the 1960's was the San Jacinto Inn at the Monument/Battleship in TX. I ate so many boiled crabs I walked sideways for a week.

I never knew teh name of that place in MS with the dome. I visited it during construction just out of curiosity--not many dome-builders in MS. The owners and contractor were there when I stopped and eager to show-off the construction. Really nice people. Glad they're successful.
