Natural mesquite charcoal, no briquettes. I use dried mesquite beans soaked in water for smoking.
I have gas too, and will use it when I don't want to wait for a good fire.

There is one useful purpose for briquettes. Dutch oven cooking. Especially when baking, it's much easier to control heat with briquettes and they aren't imparting any flavor to the food anyhow with a closed dutch.
